Once a month, my ward has an FHE for the mid-single adults (25-35yrs). So, for September I thought it would be fun to make Pink Lemonade Cupcakes...kind of a farewell to summer treat. These cupcakes are so easy to make and so tasty too! The cupcake has just a hint of lemon and the frosting is nice and tart!
Here's the recipe:
Pink Lemonade Cupcakes
1 package (18 ounces) white cake mix
3 egg whites
1 cup water
1/3 cup frozen pink lemonade concentrate, thawed
2 tablespoons vegetable oil
pink food coloring
lemon candies, for decoration
Preheat oven to 350. Line 24 muffin cups with paper baking cups.
Beat cake mix, egg whites, water, 1/3 cup concentrate, oil, and a few drops of food coloring in large bowl with electric mixer at medium speed for 2 minutes. Spoon batter evenly into prepared muffin cups.
Bake for 18 to 22 minutes or until toothpick inserted into centers comes out clean. Cool completely on wire rack before frosting.
Frosting:
1 8oz package cream cheese
1/2 cup butter (1 stick)
3 cups sifted powdered sugar
3 tbs thawed pink lemonade concentrate
Mix cream cheese and butter in a large mixing bowl with an electric mixer. Add powered sugar and pink lemonade concentrate the cream cheese/butter and mix together.
